The show stopping moment in the current production of Fiddler on the Roof is when a group of four dancers perform a well-choreographed dance while balancing bottles of wine on their heads - without spilling a drop. For people who've seen Fiddler, the words 'bottle dance' summon up more than steps. You remember a line of black-suited men, arms linked, knees bent, brows furrowed, slowly, deliberately thrusting their legs out and propelling themselves forward without toppling the wine bottles perched precariously on their hats. (Periodically, one of the dancers has to drop his bottle - Jerome Robbins wanted it to be exciting.
